Влияние уровня адреналина на мясную продуктивность и качество мяса бычков абердин-ангусской породы при определении его содержания в волосе
Аннотация
Обоснование. Интенсификация современного животноводства неизбежно приводит к усилению стрессовой нагрузки на организм животных, что негативно сказывается на их продуктивности и качестве продукции. Существующие методы оценки стрессового состояния по биологическим жидкостям (кровь, слюна) обладают существенным недостатком - они отражают лишь кратковременные гормональные колебания. В этой связи особую актуальность приобретает поиск надежных интегральных показателей хронического стресса, среди которых перспективным представляется определение концентрации адреналина в волосе.
Цель. Изучить влияние уровня адреналина оцененного по волосу на мясную продуктивность, качество мяса и минеральный обмен у бычков абердин-ангусской породы.
Материалы и методы. Исследование выполнено на 50 бычках абердин-ангусской породы. Концентрацию адреналина определяли методом иммуноферментного анализа в образцах волос, отобранных с холки животных. На основании полученных данных процентильным методом сформированы три экспериментальные группы: I - с низким (1,24-1,55 нг/мл), II - с умеренным (1,58-2,69 нг/мл) и III - с высоким (2,76-3,14 нг/мл) уровнем гормона. После проведения контрольного убоя выполнена комплексная оценка убойных показателей, морфологического состава туш, химического анализа и определение минерального профиля длиннейшей мышцы спины. Статистическая обработка данных проведена с использованием пакета программ Statistica 10.0.
Результаты. Установлено, что повышенный уровень адреналина ассоциирован со снижением массы парной туши на 5,8 %, убойной массы - на 6,0 %. При ухудшении качественных характеристик говядины: содержание внутримышечного жира снижалось на 18 %, энергетическая ценность - на 11%, концентрация кальция - на 22 %, калия - на 31 %, цинка - на 18 %, селена - на 28 %.
Концентрация адреналина в волосе может служить репрезентативным биомаркером хронического стресса, оказывающего существенное влияние на продуктивность и качественные характеристики мяса.
